Tell me, do you often have that moment when you’re sitting at work, working, writing something. Suddenly the door opens, and an Italian walks in, kneads the dough, and starts twisting it in the air. And you realize that this is a real acrobatic pizza show?

I had one of those recently 🙂

It so happened that the day I once again flew from Kiev to Baku and held a food shoot for the service food delivery DADIM was an event EURO VILLAGE 2016. A real pizzaiolo, showman, consultant and coach, none other than Manolo Mosconi, was specially invited to this event from the island of Ibiza. Since Manolo couldn’t bring the dough with him from Ibiza, he had to make the dough for his show at the Baku pizzeria where I was taking food photos 🙂

So meet Manolo Mosconi, a very funny pizzaiola who takes his business very seriously.

The first thing was to start picking up the necessary ingredients for the dough for the show. As unfortunate as it was, there was no ice in the pizzeria at that moment. It got a little uncomfortable….

But within minutes the ice appeared, and the kneading process began. The dough for the show is prepared in a special way, from specific flour and ice water…

When I took this picture I was uneasy, I thought that the mixer would burst into flames of blue, at least there was a bluish smoke. The dough for such a show is very hard and apparently you need a different power for kneading. To my great happiness, nothing terrible happened, the mixer continues to work as if nothing had happened.

 

When the dough was done, the practice for the show began. Even this workout was a real gastronomic experience for me! The chef spun the dough so masterfully that it seemed simply impossible. Meanwhile, in the background, the kitchen and delivery worked as standard.

Moving around in the kitchen and spinning pizzas is absolutely no problem for Manolo!

As it turns out, with a spinning pizza it’s no problem at all to go out and lure passersby by 🙂

Anyway, after such a private pizza show I was in anticipation of the event EURO VILLAGE to which I was also invited as an official photographer from the organizers.
